The vanilla cupcake recipe I am sharing today is a great base for any vanilla cupcake. You can add chopped fruits, like strawberries or peaches, to add into the cupcake as filling or even in the batter for an elevated vanilla cupcake.
Make baking and decorating the cupcake into a fun holiday celebration with your Valentine! Baking these Valentine’s Day cupcake will be a such a fun activity to do together. Vanilla Cupcake Recipe, Valentines Day Desserts Ideas
Serving Size = 24 cupcakes
Ingredients
Vanilla Cupcake
- 2 3/4 cups of all-purpose flour
- 2 3/4 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 1/2 cup of white granulated sugar
- 1 cup of butter, softened
- 4 large eggs
- 1 cup of milk
- 1 tablespoon of vanilla extract
Whipped Cream Frosting
- 4 cups of heavy whipping cream
- 2/3 cups of confectioners’ sugar
- 1 box (3.3 oz) of vanilla instant pudding box (will be using half, but add more for stiffer frosting)
- Red gel food coloring
Step 1
Prep your oven by preheating it to 350 degrees Fahrenheit. Add cupcake liners to your cupcake pan.
Step 2
In a large bowl, combine cupcake ingredients together. Use an electric hand mixer or standing mixer to mix until batter is smooth.
Step 3
Pour or spoon the cupcake batter into the cupcake liner filling it up 3/4 of the cupcake liner.
Step 4
Bake cupcakes in your preheated oven for 25-30 minutes or until the batter is baked. You may use a toothpick to insert into the middle of the cupcake to check if it is fully baked. The toothpick should come out clean if the batter is fully baked.
Let the cupcakes cool before frosting.
Frosting
Using an electric hand mixer or an electric stand mixer, beat the 4 cups of heavy whipping cream on high until peaks form. Add in 2/3 cups of confectioners’ sugar and mix well into the whipped cream. Add half a package of the vanilla instant pudding mix and mix well. The pudding mix adds stiffness to your whipped cream frosting. If you desire a stiffer frosting, add more instant pudding until desired texture is achieved. If the frosting is too stiff or thick, add in milk one tablespoon at a time and mix whipped frosting back to peak. Add in your red gel food coloring and mix until desired color is achieved.
Decoration
I diced up Hershey peppermint kisses candy to sprinkle on top of the frosting.
