Why Use Both Baking Powder and Baking Soda in my Muffin Recipe?
Having both as an ingredient for banana muffins is for the lift and browning. Chemical reactions between the baking soda and ripe bananas will add some rise to the muffin batter. Adding baking powder will insure that we get the full lift that in the muffin. The alkalinity in your batter from the baking soda will also aid in creating a nice brown for your muffins.
Difference Between Baking Soda and Baking Powder
Baking soda and baking powder are used in baking as leavening agents. A leavening agent is an ingredient that forms a chemical reaction with other substances to create volume and lift in baked desserts or breads which creates that fluffy and light texture. My banana muffin recipe calls the use of both baking powder and baking soda. The difference in baking soda and baking powder is that baking soda needs an acid, such as buttermilk, brown sugar, or bananas, to have a chemical reaction while baking powder only needs liquid to form a chemical reaction. Baking powder has baking soda and an acidic ingredient already mixed into the baking powder mixture so it does not need your recipe to call out for another acidic ingredient. Another difference between baking soda and baking powder is the taste. Some foods are famous for the slight tanginess due to the acidity. Using baking soda can neutralize out the acidity too much making you lose that tanginess of your food. An example is Baking soda can have a bitter taste when used too much as in ingredient in your batter.
Fluffy Banana Muffin Recipe
Serving Size =12 muffins
Ingredients:
1/3 cup butter
1 teaspoon vanilla
3/4 cup white granulated sugar
1 egg
3 large bananas
1 1/2 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Step 1:
Prep your oven by preheating it to 350 degree Fahrenheit.
Step 2:
In a bowl, cream together 1/3 cup of butter, 3/4 cup white granulated sugar, 1 teaspoon vanilla, and 1 egg until smooth.
Step 3:
Mash your 3 ripe bananas and add into your creamed butter batter.
Step 4:
Add in 1 1/2 cup of flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and 1/2 teaspoon of salt to your creamed butter batter. Use a hand mixer to quickly mix the batter until smooth. Do you over mix your batter.
Step 5:
Coat muffin pan with a thin coat of oil or use cupcake paper liners to line the muffin pan. Fill each muffin pan 3/4 way up with your muffin batter.
Step 6:
Bake for 25 minutes in your preheated oven.
Fluffy Banana Muffin Recipe
Ingredients
- ⅓ cup butter at room temperature
- 1 teaspoon vanilla extract
- ¾ cup white granulated sugar
- 1 large egg
- 3 large bananas ripped
- 1 ½ cup all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
Instructions
- Prep your oven by preheating it to 350° Fahrenheit.
- In a large bowl, cream together ⅓ cup of butter, ¾ cup white granulated sugar, 1 teaspoon vanilla, and 1 egg until smooth.
- Mash your 3 ripe bananas in a separate bowl then add the mashed bananas into your creamed butter batter.
- Adding 1 ½ cup of flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and ½ teaspoon of salt to your creamed butter batter. Use a hand mixer to quickly mix the batter until smooth. Do not over mix your batter.
- Lightly spray to coat the muffin pan with non-stick spray or oil or use cupcake paper liners to line the muffin pan. Fill each muffin pan ¾ way up with your muffin batter.
- Bake for 25 minutes in your preheated oven.
