Prep your oven by preheating it to 350° Fahrenheit.
In a large bowl, cream together ⅓ cup of butter, ¾ cup white granulated sugar, 1 teaspoon vanilla, and 1 egg until smooth.
Mash your 3 ripe bananas in a separate bowl then add the mashed bananas into your creamed butter batter.
Adding 1 ½ cup of flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and ½ teaspoon of salt to your creamed butter batter. Use a hand mixer to quickly mix the batter until smooth. Do not over mix your batter.
Lightly spray to coat the muffin pan with non-stick spray or oil or use cupcake paper liners to line the muffin pan. Fill each muffin pan ¾ way up with your muffin batter.
Bake for 25 minutes in your preheated oven.
