I’m a huge cheese fan, so having the recipe on hand is perfect for when I want to make my foods extra cheesy.
Nacho cheese sauce is such a versatile condiment. You can use nacho cheese sauce on just about anything. You can slather it on tortilla chips, fries, burgers, or even use it as a dipping sauce for pretzels and even pizza! You can try to be on the healthier side and add nacho cheese sauce to steamed veggies, like broccoli, making it foods like broccoli with cheese.
What Makes a Good Cheese Sauce?
Cheese sauce is gooey and creamy. If you’ve never made cheese sauce before or researched about cheese sauce, you may think that you can just heat up the cheese from your refrigerator using a microwave or stove to melt it, and it would turn into a creamy cheese sauce. Well, you would be very disappointed to see that that your melted cheese would eventually harden into a giant blob after it starts cooling down. Cheese is solid milk fat. When you heat it up it to melting temperature, the fats begin to liquify and the cheese softens. As the cheese melts it loses moisture. When you melt cheese, you are separating the fats from the protein as it loses its water content, so to keep the cheese in a liquid state you will need to add milk and starches, such as flour or cornstarch.
A few common cheeses that are good cheese to use for cheese sauce are: American, cheddar, colby, and gouda. These cheeses will make smooth and creamy cheese sauces because of their protein structure, fat content and acidity. Cheese with high fat content melt well while cheeses with high acidity will not melt well because of how the calcium glue gets affected from the acidity.

Easy Nacho Cheese Sauce Recipe
Serving Size = 2 cups
Ingredients:
2 tablespoons of butter
2 tablespoons of all-purpose flour
1 1/4 cup of milk, at room temperature
7 slices of American Cheese
1/4 teaspoon of salt
1/2 teaspoon of cayenne pepper
Step 1:
Melt 2 tablespoons of butter in a medium sized pot on the stove at medium heat. Once butter is melted, add 2 tablespoons of all-purpose flour into the pot and mix the the flour and butter together with a spatula until smooth.
Step 2:
Pour 1 1/4 cup of milk into the pot and constantly stir it until mixture slightly thickens and is smooth. Add 7 slices of cheese to the mixture and stir until everything is melted and smooth. Finally add in your 1/4 teaspoon of salt and 1/2 teaspoon of cayenne pepper and stir until everything is blended.
