Nothing screams Christmas like peppermint! I love the smell of peppermint during the holiday season, so I had to make a peppermint cookie recipe to share. The final touch of adding Hershey’s peppermint chocolate kisses on top of each cookie makes this the ultimate peppermint cookie! You will get a burst of creamy chocolate and peppermint while chewing it with the buttery cookie.
Using Butter vs Oil in Cookies
This delicious recipe calls for the use of butter. The reason why my recipe uses butter is because I wanted my cookies to have the nice smell of butter while having a moist and soft cookie. Butter and oil are both fats, but they react differently in baking.
Butter has a higher melting temperature than oil. Oil is in liquid form when it is in room temperature. This means that if your cookie recipe only uses butter, it will most likely have a flatter and spread out cookie because the butter slowly melts as it bakes in the oven. Butter being creamed with sugar for the cookie dough can also act as a leavening agent. As you cream the butter and sugar together, you’re adding air which allows that flaky texture when baked. When using oil for baking cookies, you will have a cookie that almost keeps its exact shape from cookie dough to baked cookie.
If you run out of butter, you can always use oil as substitution for this recipe. Use equal amounts as substitution. This means 1/2 cup of butter is equal to 1/2 cup of oil.
Christmas Peppermint Cookies, Hershey’s Peppermint Kisses Cookies
Serving Size = 12 cookies
Ingredients:
- 1/2 cup confectioners’ sugar
- 1 and 1/2 cup of all-purpose flour
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1/2 cup and 2 tablespoons of butter, at room temperature
- 1 large egg
- 1/2 teaspoon of peppermint extract
- 1/2 teaspoon of vanilla extract
- 1/4 cup chopped Hershey’s peppermint kisses
- 12 Hershey’s peppermint kisses to put on top of each cookie
Step 1
Prep your oven preheating the oven at 350 degree Fahrenheit.
Step 2
In a large bowl, cream together all your butter, confectioners’ sugar, flour, egg, baking powder, and salt until smooth. Add the peppermint extract and vanilla vanilla extract and mix until cookie dough is smooth.
Step 3
Add in chopped Hershey’s peppermint kisses and fold it into the cookie dough.
Step 4
Portion out your cookie dough into 12 portions and shape it to a round ball. Place the cookies onto your non-stick cookie sheet. Space out the cookie dough at least one inch apart to prevent it from merging into each other when baked. Flatten the round cookie dough by using your hands to lightly press the cookie down.
Step 5
Bake for 10 mins in your preheated oven. As soon as the cookies are done baking, take out your tray of cookies and add the Hershey’s peppermint cookies on top of each cookie by pressing it down in the middle of cookie while it is still warm. Allow cookies to cool before eating.
