Ingredients
- 1/4 cup of melted butter (can use melted coconut oil instead)
- 1/3 cup of peanut butter (can use any other nut or seed butter instead)
- 1/2 cup of brown sugar (not packed)
- 1 large egg (can use flax egg)
- 1 teaspoon of vanilla extract
- 1/2 cup of coconut flour
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/2 cup of chocolate chips
Step 1
Prep the oven by preheating it to 350 degrees Fahrenheit.
Step 2
In a large bowl, add melted butter, peanut butter, brown sugar, egg, vanilla extract, coconut flour, baking soda, and salt together. Use an electric hand mixer or stand mixer to mix the cookie batter together well. Fold in the chocolate chips.
Step 3
Chill your cookie batter in the fridge for 30 minutes.
Step 4
Remove cookie dough from the fridge. Use your hands and make about 1-2″ round diameter cookie dough balls. Place each cookie dough ball on a baking pan that has been sprayed with non-stick cooking spray or lined with parchment paper. Use your fingers or palm to lightly press down the dough.
Step 5
Bake for 10 minutes in the preheated oven.
