Equipment

  • food processor or powder blender

Ingredients

  • 2 cup dried chickpeas
  • 2 teaspoon salt
  • 1 teaspoon baking soda
  • water to soak chickpeas
  • ½ lemon juice
  • 3 tablespoon tahini
  • 3 cloves garlic
  • ½ cup water
  • cup olive oil extra virgin
  • 1 tablespoon ground cumin
  • OPTIONAL cayenne pepper as garnish

Instructions

  • Prep your chickpeas by putting 2 cups of dried chickpeas into a large bowl or container. Add water until it covers all the chickpeas and is at least 2 inches above the chickpeas. Let them soak overnight in the refrigerator.
  • Drain your chickpeas. Pour the drained chickpeas into a large pot with 2 teaspoon of salt and 1 teaspoon of baking soda. Fill your pot with clean water. Place your pot on a stove and bring the pot to boil. Once the water boils, bring the heat down to medium-low temperature and let the pot with chickpeas boil for 1 hour until chickpeas are soft.
  • Drain the pot of cooked chickpeas and let it cool down to room temperature.
  • In a food processor or powder blender, add the cooked chickpeas, squeeze half a lemon’s juice, 3 tablespoon tahini, 3 garlic cloves, ½ cup of water, and 1/3 cup extra virgin olive oil. Blend until smooth. Remember to stop the food processor or powder blender occasionally to scrap down the sides. If the hummus is too thick, add more water to get your desired texture.
  • Add 1 tablespoon of ground cumin to your hummus and give it a final blend to evenly distribute the cumin.
  • OPTIONAL: When serving your hummus, drizzle olive oil and garnish with cayenne pepper for the pop of color and little spice.
