Low Calorie Banana Protein Muffin, Protein Powder Banana Muffins

Ingredients
  

  • 4 large ripe banana
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 4 scoops protein powder
  • cup coconut flour
  • 2 tablespoon sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon baking powder
  • ½ cup chocolate chips
  • OPTIONAL chopped nuts to sprinkle on top of muffin

Instructions
 

  • Prep the oven by preheating it to 350 degrees Fahrenheit.
  • In a large bowl, mash your ripe bananas.
  • Add all your ingredients into the bowl with the mashed bananas. Use an electric hand mixer or stand mixer to mix all ingredients together until batter is smooth. If the batter is too thick for you, you may add in more almond milk 1 tablespoon at a time until desired texture is achieved.
  • Fold in the chocolate chips into the batter.
  • Use cupcake paper liners to line your muffin pan. Fill each liner all the way up with your muffin batter.
  • OPTIONAL: Add chopped nuts on top of the muffin.
  • Bake for 30 minutes in the preheated oven or until the batter is baked. You may use a toothpick to insert into the middle of the cupcake to check if it is fully baked. The toothpick should come out clean if the batter is fully baked.
