Chocolate Snack Cake Recipe, Valentines Day Desserts Ideas

Make your own version of the Little Debbie snack cakes at home with this easy chocolate snack cake recipe! Great for Valentine's Day!

Ingredients
  

Chocolate Cake

  • 5 tablespoon butter at room temperature
  • 1 ½ tablespoon vegetable oil
  • ½ cup white granulated sugar
  • 2 large eggs
  • 1 cup + 1 tablespoon all-purpose flour
  • 2 teaspoon baking powder
  • 3 tablespoon cocoa powder unsweetened
  • ½ cup + 3 tablespoon heavy whipping cream or milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Chocolate Icing Shell

  • 2 cups chocolate chips
  • 2 tablespoon coconut oil

Instructions
 

  • Prep your oven by preheating it to 350 degrees Fahrenheit.
    Line a cake pan or circular 9 inch diameter baking pan with parchment paper or apply a thin layer of oil to the baking pan to easily remove the cake after it is finished baking.
  • In a large bowl, combine all the cake ingredients together. Use an electric hand mixer or standing mixer to mix until the batter is smooth.
  • Pour the cake batter into your baking pan.
  • Bake for 15-18 minutes or until the batter is baked. You may use a toothpick to insert into the middle of the cupcake to check if it is fully baked. The toothpick should come out clean if the batter is fully baked.
  • Remove cake from the oven. Let the cake cool before cutting it. You do not want to dry out your cake. Once it is cooled down, cut your cake into your desired shape. I used a heart shaped cookie cutter to cut out my snack cake portions. You can just use a knife and cut the cake into equal portion square or rectangular pieces.
  • Make the chocolate icing shell by melting 2 cups of chocolate chips in a large bowl. Once chocolate is melted, add in 2 tablespoons of coconut oil and mix until smooth.
    You can temper the chocolate on the stove using a double boiler method OR you can microwave the chocolate chips in the microwave in 30 second intervals and make sure to stir in between until chocolate is all melted.
  • Dip each snack cake into the bowl of your chocolate icing shell mixture to coat the snack cake. Set the coated snack cake on a non-stick baking tray.
    You can line the baking tray with parchment paper to ensure the cake easily removes from the tray when the chocolate hardens.
  • OPTIONAL: Decorate your snack cake. I used sprinkles on top of my snack cakes while the chocolate icing shell was still wet. You can add nuts, chopped fruits, or anything edible you desire! Use your creativity!
  • Put your snack cakes into the fridge for 20-30 minutes to allow the chocolate icing shell to fully harden.
