Do not be discouraged! You can make my famous butterless chocolate chip
cookies! My simple chocolate chip cookie recipe uses oil instead of butter, so you can make quick and easy chocolate chip cookies. The cookies have a soft inside, but a nice and crispy edge. Every time I bake a batch for my family, friends, and coworkers I get so many compliments and requests for my recipe.
The journey of me creating my perfect chocolate chip cookie recipe all started out when I was in high school. My high school science class was hosting a bake sale to fund a project my teacher had organized for us, so I wanted to contribute by baking a batch of chocolate chip cookies for the sale. I wanted to put effort into baking delicious cookies, so I did a lot of research for various recipes. I found that many recipes called for butter in their ingredient list, so I assumed that the only way to bake great chocolate chip cookies was to use butter. I ended up being satisfied with a batch of cookies I made and decided to keep that recipe as my go-to chocolate chip cookie recipe. I continued to use that recipe every time I was craving for home made chocolate chip cookies; however, one day I ran into an incident that changed my recipe forever!
My mom and I were both in the mood for home made cookies, so I volunteered to bake fresh chocolate chip cookies. I went straight to mixing my dry ingredients. I then opened my fridge to grab my butter. I had almost forgotten to take it out to let it get to room temperature. That was when I realized that we had ran out of butter! I did not feel like stopping my baking momentum to get into my car in order to drive all the way to my local grocery store just to grab a package of butter, so I decided to use oil in lieu of butter. I knew I’d have to tweak my recipe because without butter my cookies might be too crispy and loose all of its chewiness. Bless my mom’s soul, she was the first to try my new butter-less chocolate chip cookies recipe. The first batch was way too oily and overly sweet. This did not make me give up on the idea of replacing butter with oil for baking chocolate chip cookies. I continued to tweak the recipe such as dividing up the ratio of graduated white sugar with brown sugar. It was a few batches of cookies until I was finally satisfied with my new soft chocolate chip cookie with a crispy edge recipe.

Chocolate Chip Cookie Recipe
Serving Size = 12 cookies
Ingredients:
1 ¼ cups flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup vegetable oil
¾ cup packed brown sugar
¼ cup white sugar
1 egg
1 teaspoon vanilla extract
½ cup chocolate chip
Step 1:
Prep your oven preheating the oven at 350 degree Fahrenheit.
Step 2:
In a large bowl, cream together all your wet ingredients (oil, egg, vanilla extract) and sugar with a hand mixer. Make sure there are no clumps and that your mixture is smooth.
Step 3:
Add in your dry ingredients (flour, baking soda, salt) to your wet mixture and mix well with a hand mixer. Make sure there are no clumps and that your mixture is smooth.
Step 4:
Add your chocolate chips into the bowl of batter, and fold in the chocolate chips with a spatula.
Step 5:
Use a spoon to portion out about 1-1.5 Tbsp of cookie batter, shape it to a round ball, and place it onto your un-greased cookie sheet. Space out the cookie dough at least one inch apart to prevent it from merging into each other when baked.
Step 6:
Bake for about 10 mins in your preheated oven. Once cookies are done baking, allow the cookies to cool down.
