- ¼ cup metled butter can use melted coconut oil instead
- ⅓ cup peanut butter can use any other nut or seed butter instead
- ½ cup brown sugar not packed
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup coconut flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chocolate chips
Prep the oven by preheating it to 350 degrees Fahrenheit.
In a large bowl, add melted butter, peanut butter, brown sugar, egg, vanilla extract, coconut flour, baking soda, and salt together. Use an electric hand mixer or stand mixer to mix the cookie batter together well. Fold in the chocolate chips.
Chill your cookie batter in the fridge for 30 minutes.
Remove cookie batter from fridge. Use your hands and make about 1-2" round diameter cookie dough balls. Place each cookie dough ball on a baking pan that has been sprayed with non-stick cooking spray or lined with parchment paper. Use your fingers or palm to lightly press down the dough.
Bake for 10 minutes in the preheated oven.
